CINNAMON FRENCH TOAST.

This is an absolute favourite of mine - cinnamon swirled french toast drizzled liberally with maple syrup and garnished with some crispy bacon - amazing!

I have made this recipe using both shop bought cinnamon swirls and by making the the cinnamon swirls from scratch using a recipe similar to this. Its a great way to reinvent stale bakes and is delicious either way!

For 1 swirl:

Start by slicing off the top (and any icing) of the swirl and then slice the bake in two (horizontally).

Beat together 2 egg yolks, 40mls of milk and a couple of drops of vanilla extract. Dip the swirls into the eggy mixture on both sides and leave to soak. Whilst the swirls are soaking, heat a frying pan and cook your bacon. Once the bacon has been cooked and the pan is full of the bacon fat, transfer the swirls to the pan and fry each side on a medium heat until crispy and golden on both sides.

Serve hot with maple syrup.
