COOKIES.
Here is a quick and easy recipe for delicious, gooey chocolate chip cookies.
From cupboard to tummy in just 20 minutes it's a great thing to make with your kids or even just when you have a craving for something yummy.
Ingredients...
125g butter
100g soft brown sugar
125g caster sugar
1 egg
1tsp vanilla extract
225g self-raising flour
200g chocolate chunks (any kind)
Method...
Preheat the oven to 180 degrees/gas 5 and line 2 baking trays with baking parchment.
Mix together the butter and both sugars until pale and fluffy (about 3 minutes). Add in the egg and the vanilla essence and mix thoroughly. Sift in the flour and add the chocolate (the mixture will be quite stiff).
Spoon heaped tbsp size blobs of the mixture onto the trays (allowing space for them to spread in the oven - I usually get 8 - 10 on a tray).
Bake for 10-12 minutes until just golden at the edges. As difficult as they are to resist, I recommend waiting for 5 minutes before eating one/all (so that they can harden slightly... and so you don't burn yourself!).
Makes 16-20.
Extras... You can add anything to these cookies to make them suit your particular tastes - from white chocolate chips to dried fruit or even bacon pieces!
